ADVICE FROM A PRO
Matt’s tip

“A great looking grazing table is a lot harder to get right than it looks! I know it seems easy, like it’s just arranging piles of charcuterie on a table. But the gaps, proportions, and color balance that make it look effortlessly abundant are exactly what catch people out when they try to wing it from scratch. So, unless you’ve done it before and feel confident, I’d always recommend working from a proper layout template or guide rather than eyeballing it.
One trick worth knowing even with a template in hand: group items in odd numbers, threes and fives rather than twos and fours. It’s a simple rule stylists lean on because odd-numbered groupings read as more natural than perfectly even ones.
Height does a lot of the work too. Prop up a board or two on a cake stand or riser before you start filling in the flatter zones, so the spread has some rise and fall to it rather than sitting completely flat.
One more thing worth planning for: anything perishable — cheese, cured meats, dips — shouldn’t sit out for more than a couple of hours, so time the table for just before guests arrive rather than setting it up first thing.”
